Had this happen twice. After riding the motorbike for a few minutes it got frozen when I stopped it. Couldn't change gears, couldn't get off the bike, couldn't turn it off. The only way to fix it was to exit the server and relog which seemed to despawn the bike, but also possible someone else took it. Did not encounter this issue with the moped.

It happened twice while riding the motorbike. I'm not sure what I did specifically but both times it did seem to happen after reaching high speeds in 4th gear. There was more obvious stuttering with the server the second time.
